How Does One Start a Restaurant Business?

I have been wanting to open a organic type restaurant in this area for about a year now and I am thinking of actually doing it. The only problem is that I really have no clue how to start a restaurant business. So I have quite a bit of learning to do still but I figure once I do that and get all of my ducks lined up on the licensing and everything else I should be ready to go by next Fall. I am really excited and since there are no restaurants like this in the area I should do very well.
